Replicated trials were conducted in Summers 1998 and 1999 at two commercial orchards (A and B) to determine the influence of a metalized, high density polyethylene reflective film (SonocoRF) and aminoethoxyvinylglycine (ReTain), on fruit red skin coloration and maturity of `Gala' apples (Malus sylvestris var. domestica). There were four experimental treatments: 1) nontreated control; 2) reflective film (RF); 3) ReTain; and 4) RF + ReTain. RF was applied 4 weeks before anticipated start of harvest by laying a 5-ft-wide (150-cm) strip on each side of the tree row in the row middle. ReTain was applied 4 weeks before harvest at the commercial rate in one orchard and at 60% of the commercial rate in a second test. ReTain delayed fruit maturity. Fruit from RF trees had a significantly greater percent surface red color than fruit from trees not treated with RF. Fruit from RF + ReTain were significantly redder and had higher soluble solids concentration (SSC) than fruit from trees treated with ReTain alone. There were no differences in size, fruit firmness or starch content between fruit from RF and RF + Retain. RF appears to be a method to increase red skin coloration in `Gala' apples treated with ReTain without adversely impacting maturity.

ReTain™ is a plant bioregulator containing the active ingredient aminoethoxyvinylglycine (AVG), which inhibits the ethylene biosynthesis pathway. In 1997, the first efficacy studies on `Royal Gala' apple with ReTain™ were conducted under New Zealand conditions in Hawkes Bay. ReTain™ was applied 4 weeks before the anticipated start of harvest on `Royal Gala' at 850 and 1700 g·ha–1 with or without adjuvants. ReTain™ application delayed the onset of `Royal Gala' fruit maturation between 1 and 2 weeks, resulting in enhanced fruit size and fruit flesh firmness at harvest. The optimum response for delaying the onset of fruit maturation was achieved using ReTain™ at 850 g·ha–1 if applied in combination with a wetter. Fruit were also graded for fruit quality and air-stored at 0.5 °C. Fruit after 10 weeks of storage showed no difference in fruit flesh firmness, but all ReTain™ treatments had fruit with less yellow background colour compared with untreated fruit. In 1998, efficacy studies were undertaken in three geographical locations on `Royal Gala'. ReTain™ was applied at a rate of 830 g·ha–1 in combination with Silwet L-77 at 0.1%. All trees with the exception of `Royal Gala' grown in the Hawkes Bay had not received any ReTain™ previously. In all regions, seasonal changes in background color and starch pattern index were delayed by ReTain™ treatment. A concurrent delay of an increase in soluble solids concentration and retention of higher flesh firmness were also induced by ReTain™ treatment.

`Honeycrisp' is a new apple [Malus sylvestris (L.) Mill. var. domestica (Borkh.) Mansf.] cultivar that has been planted extensively in North America, but the storage disorders soggy breakdown and soft scald have resulted in major fruit losses. The effects of harvest date and storage temperature on fruit quality and susceptibility of fruit to these disorders have been investigated in Michigan, New York, and Maine. Internal ethylene concentrations were variable over a wide range of harvest dates, and a rapid increase in autocatalytic ethylene production was not always apparent. The starch pattern index, soluble solids content, titratable acidity and firmness also appear to have limited use as harvest indices. Development of soggy breakdown and soft scald is associated with later harvest dates and storage of fruit at temperatures of 0 to 0.5 °C compared with higher storage temperatures. It is recommended that `Honeycrisp' be stored at 3 °C, although storage disorders still can occur at this temperature if fruit are harvested late. In addition, greasiness development may be worse at higher storage temperatures.

Calcium sprays have improved quality and storage life of apples throughout the world as a result of Ca prevention of many fruit physiological disorders. The efficacy of Ca sprays, however, varies according to soil, cultivar/rootstock, orchard cultural practices, and weather conditions. This study was carried out from 1998 to 2004 in southern Brazil in order to assess the effect of Ca sprays on quality of `Gala' fruits in an orchard planted in 1988 on a density of 1234 trees/ha. Treatments consisted of 0, 4, 8, and 12 sprays of 0.5% CaCl2. Fruits of same size and maturity level were annually analyzed at harvest and after 5 months of cold storage. In five out of six seasons, fruits from all treatments were free of any physiological disorder, and Ca sprays had no effect on leaf composition and on fruit quality attributes (soluble solids, acidity, starch pattern index, flesh firmness, and concentrations of N, K, Ca, and Mg). In the 2000–01 season, however, when yield was 18 t·ha-1 and fruits had an average weight of 175 g, the incidence of bitter pit plus lenticel blotch pit on stored fruits decreased from 24% in the treatment with no calcium to 2% in that with 12 calcium sprays. Two seasons later, yield was also light (25 t·ha-1) and fruits were big in size (168 g), but they did not show any disorders regardless of Ca sprays. It seems that the incidence of Ca related disorders in `Gala' apples grown on limed soils in Brazil only occurs in seasons with a light crop load as a result of large fruits and a high leaf/fruit ratio, associated with some unknown climatic factor.

Maturity and quality of fruit harvested from an orchard of disease-resistant ‘Liberty’ apple (Malus ×domestica Borkh.) trees was investigated during and after the transition from conventional to integrated (IFP) and organic fruit production (OFP) systems. Over 4 years, internal ethylene concentration, starch pattern index, flesh firmness, soluble solids concentration (SSC), titratable acidity (TA), and percent of surface blush of fruit at harvest were not consistently different between fruit from IFP and OFP systems. Total phenolic content and antioxidant capacity of the fruit were also similar between treatments. IFP-grown fruit contained more potassium during the first 2 years and more calcium in all years than OFP-grown fruit. After fruit were stored in air at 0.5 °C for 9 weeks in 2007, OFP-grown apples were firmer and had higher SSC, TA, and SSC:TA ratios. In double-blind triangle taste tests, consumer panelists were able to discriminate between the fruit from each treatment, but in double-blind hedonic and intensity tests, panelists did not consistently rate one treatment more highly than the other. Overall, consumer panelists favorably rated internal quality of fruit grown under both IFP and OFP systems. In 2006, when weather and disease caused a high percentage of OFP-grown fruit to have cosmetic defects, the panelists rated the appearance of OFP-grown apples as less acceptable than the cleaner-looking IFP-grown apples. Our study of ‘Liberty’ apple fruit maturity and quality during a 4-year transition period from conventional to IFP and OFP systems showed that differences were small if present, whereas internal fruit quality was rarely different between systems.

Preharvest development and postharvest disappearance of watercore in `Fuji' apples (Malus ×domestica Borkh.) from a northern (Hawke's Bay, latitude 39° south) and southern (Otago, latitude 45° south) region of New Zealand were compared. A new method for quantifying watercore was developed. A photocopy was taken of the symptoms after each fruit was cut in half through the equator, and then the area of affected flesh (photocopies black) was measured using morphometric methods and compared to the area of unaffected flesh (photocopies white). Watercore was more severe and developed earlier in the season in Otago than in Hawke's Bay. In Otago, a block-type watercore predominated, disorder symptoms initially appearing in the tissues located at the junction of two carpels, while in Hawke's Bay a radial-type of watercore predominated, initially appearing in the tissues surrounding the coreline vascular bundles. Regression analysis identified that orchard and harvest date accounted for most of the differences in watercore symptoms and that the initial appearance of low levels of watercore was the best predictor that fruit would start to develop commercially significant levels of watercore. Incorporation of background color, internal ethylene concentration, starch pattern index, and firmness only slightly improved the regression coefficient. Watercore disappeared from the flesh during storage of fruit from both regions. Fruit from early harvests had the least severe symptoms, and the highest rates of watercore disappearance during storage. In fruit with more severe symptoms at harvest, its disappearance during storage was associated with an increase in fruit volume and air space, which occurred despite continuing mass loss. We suggest that during storage, the extracellular fluid associated with watercore symptoms is absorbed into the cells, and thus drives the increase in fruit volume.

The recent growth in the U.S. hard-cider industry has increased the demand for cider apples (Malus ×domestica Borkh.), but little is known about how to manage orchard soil fertility best to optimize horticultural performance and juice characteristics for these cultivars. To assess whether nitrogen fertilizer applied to the soil can improve apple juice and cider quality, calcium nitrate (CaNO3) fertilizer was applied at different rates to the soil beneath ‘Golden Russet’ and ‘Medaille d’Or’ trees over the course of three growing seasons. The experiment started when the trees were in their second leaf. The trees were cropped in their third and fourth leaf. At the end of the first growing season of the experiment, the greatest fertilizer rate increased tree trunk cross-sectional area (TCSA) by 82% relative to the control, but this difference did not persist through to the end of the study. Yield and crop load were unaffected by the nitrogen fertilization treatments. Increasing the nitrogen fertilizer rate correlated positively with more advanced harvest maturity in ‘Golden Russet’ fruit, which resulted in greater soluble solid concentration (SSC). Fruit from the greatest fertilizer rate treatment had an average starch pattern index (SPI) that was 1 U greater than in the control, and an SSC that was 3% greater than the control. The fertilizer treatments did not affect juice pH, titratable acidity (TA), or total polyphenol concentrations. Yeast assimilable nitrogen (YAN) concentrations were increased by nitrogen fertilization for both cultivars in both harvest years. The greatest fertilizer treatment increased juice primary amino nitrogen by 103% relative to the control. Greater nitrogen fertilization rates correlated positively with less hydrogen sulfide production during the fermentation of ‘Golden Russet’ juice from the first, but not the second, harvest. During the first year, cumulative hydrogen sulfide production for the ‘Golden Russet’ control treatment was 29.6 μg·L–1 compared with the ‘Golden Russet’ high treatment, which cumulatively produced 0.1 μg·L–1. Greater maximum fermentation rates and shorter fermentation durations correlated positively with increased fertilization rate for both cultivars after the second harvest. High treatment fermentations had maximum fermentation rates 110% greater, and fermentation durations 30% shorter than the control. Other horticultural and juice-quality parameters were not affected negatively by the CaNO3 treatments. In orchards producing apples specifically for the hard-cider industry, nitrogen fertilizer could increase juice YAN, thus reducing the need for exogenous additions during cider production.
