Abstract

Impact induced bruising of cranberries (Vaccinium macrocarpon Ait.) predisposes the fruit to physiological breakdown often without showing external symptoms of impact for many hours. Impacts also induce marked and long lasting stimulation of C02 evolution almost immediately following its occurrence. This casual response relationship may be of value as an early sign of bruising in cranberries or other fruits and vegetables which are slow to show definite symptoms of rough handling.

Surface areas of differently shaped vegetables, namely beet (Beta vulgaris L.), cucumber (Cucumis sativus L.), carrot (Daucus carota L.), and parsnip (Pastinaca sativa L.) were determined by Baugerod's (a linear) method, a shrink-wrap replica method, and image analysis. Values obtained using these methods did not differ significantly for carrots and beets. Surface area values obtained using image analysis were higher than those obtained by Baugerod's method for parsnips (by 23.5%), and higher than Baugerod's and shrink-wrap replica methods for cucumbers (by 11.3% and 12.6%, respectively). A method was considered reproducible if surface area values from five measurements on the same product did not differ significantly (P ≤ 0.05). Surface area values for an individual product varied in the range of 4.7% for Baugerod's method for parsnips, and 6.6% for the shrink wrap replica method for carrots. No significant variation was observed for any of the vegetables when repeated measurements were made using the image analysis method. Image analysis offers rapidity, lack of adverse effect on produce, and the ability to collect and analyze data simultaneously. However, in absence of the necessary equipment for image analysis, Baugerod's method may be used for a product symmetrical around its central axis, after comparing it with a more direct procedure (e.g., shrink-wrap replica method).

A new chlorophyll fluorescence (F) sensor system called FIRM (fluorescence interactive response monitor) was developed that measures F at low irradiance. This system can produce a theoretical estimate of Fo at zero irradiance for which we have coined a new fluorescence term, Fα. The ability of Fα to detect fruit and vegetable low-O2 stress was tested in short-term (4-day) studies on chlorophyll-containing fruit [apple (Malus sylvestris (L.) Mill. var. domestica (Borkh.) Mansf.), pear (Pyrus communis L.), banana (Musa ×paradisiaca L.), kiwifruit (Actinidia deliciosa C.S. Liang & A.R. Ferguson), mango (Mangifera indica L.), and avocado (Persea americana Mill.)] and vegetables (cabbage (Brassica oleracea L. Capitata Group), green pepper (Capsicum annuum L. Grossum Group), iceberg and romaine lettuce (Lactuca sativa L.)). In all of these fruit and vegetables, Fα was able to indicate the presence of low-O2 stress. As the O2 concentration dropped below threshold values of 0 to 1.4 kPa, depending on the product, the Fα value immediately and dramatically increased. At the end of the short-term study, O2 was increased above the threshold level, whereupon Fα returned to approximately prestressed values. A 9-month study was undertaken with `Summerland McIntosh' apple fruit to determine if storing the fruit at 0.9 kPa O2, the estimated low O2 threshold value determined from Fα, would benefit or damage fruit quality, compared with threshold + 0.3 kPa (1.2 kPa O2) and the lowest recommended CA (1.5 kPa O2). After 9 months, the threshold treatment (0.9 kPa) had the highest firmness, lowest concentration of fermentation volatiles (ethanol, acetaldehyde, ethyl acetate) and lowest total disorders. Sensory rating for off-flavor, flavor and preference indicated no discernible differences among the three treatments.

The origins, demise and current status of some common misconceptions about the role of fruit and vegetables in human nutrition are discussed. Most, but not all, of the misconceptions were held by the public. The early widespread belief that tomatoes were poisonous was gradually overcome, and today the tomato is one of the most versatile and widely used foods in the diet. Recent reports suggest that consumption of tomatoes and tomato products has the potential to reduce the risk of certain cancers. Our current awareness of the potential of spinach in nutrition and health evolved from an early misconception that its only important nutritive value was as a source of iron. The connection between foods from the nightshade family and arthritis and the connection of cherries and gout relief are discussed briefly. The misconception that a wide variety of fruit and vegetables was not needed in the human diet was rejected long ago. Today fruit and vegetables are considered essential for their intrinsic nutritive value and for their potential health functionality because of the phytochemicals they contain.

Plants are the foundation for a significant part of human medicine and for many of the most widely used drugs designed to prevent, treat, and cure disease. Folkloric information concerning traditional remedies for disease has had inestimable value in establishing familial and cultural linkages. During the 20th century, modern medical science in the U.S. and other developed countries ushered in a new era focused on synthetic medicines. Even though many of these compounds were based on natural compounds found in plants, the drive towards synthetic pharmaceuticals created a knowledge gap concerning the health functionality of plants, crops, and food. Paralleling this development, biochemists and nutritional scientists pioneered the discovery of vitamins during the early decades of the 20th century. This research paved the way for dietary guidelines based on empirical data collected from animal feeding trials and set the stage for the current emphasis on phytonutrients. Three primary stages characterize the use of fruits and vegetable in human health. The first stage concerns the observation that many fruit and vegetable crops were originally domesticated for their medicinal properties. Making their way into the diet for this purpose, fruit and vegetable crops remained on the fringe from a culinary point of view. The second stage began when the role of vitamins became more widely understood, and fruit and vegetable plants were quickly recognized as a rich source of certain vitamins, minerals, and fiber. At this point, they became more than just an afterthought in the diet of most U.S. citizens. Cartoon icons such as Popeye made the case for the health functionality of leafy greens, while parents schooled their children on the virtues of carrots (Daucus carota), broccoli (Brassica oleracea), and green beans (Phaseolus vulgaris). This renaissance resulted in large increases in fresh fruit and vegetable consumption across the country, a trend that continues to this day. The third phase can be characterized by the recognition that fruit and vegetable crops contain compounds that have the potential to influence health beyond nutritional value. These so-called functional foods figure prominently in the dietary recommendations developed during the last decades of the 20th century. In recent years, surveys suggest nearly two-thirds of grocery shoppers purchase food specifically to reduce the risk of, or manage a specific health condition. Evidence abounds that consumers, including Baby Boomers, choose foods for specific health benefits, such as the antioxidant potential of vegetables, suggesting high levels of nutritional literacy. Clinical and in vitro data have, to some degree, supported the claims that certain foods have the potential to deter disease, however much research remains to be conducted in order to definitively answer specific dietary-based questions about food and health.

Plant growth and residue decomposition values are needed by the Soil Conservation Service for developing data bases for selected fruit and vegetable crops. These data bases will be used for predicting soil loss using improved erosion prediction technology. The plant growth parameters under investigation are canopy cover leaf area index, plant height plant weight, root weight, stem diameter and vegetative dry matter. The climatic parameter are daily base temperature rainfall and growing degree days. The following is a list of the residue decomposition parameter: 1. Residue weight and harvest 2. Initial carbon-nitrogen ratio, and 3. Percent residue cover at harvest. The results are being used in the WEPP model to predict soil erosion. Data collection afor these parameters start 15 days after planting for vegetables and continue at 7 day intervals through maturity.

There was a remarkable growth in China's greenhouse horticulture during the past decade. In 1989, the greenhouse area in China was 22,000 ha, but this figure reached up to 350,000 ha in 1999, about 16 times as large as that in 1989. Currently, the main greenhouse design used for commercial production is the energy conservation type—solar greenhouse—and many growers use eco-organic soilless culture for production. The substrates used for vegetable production are perlite, vermiculite, peat, coal cinder, sand, coir, sunflower stem, and sugar cane stem. Dry solid organic manure is mixed into the substrates before conducting cultivation, and then only water is for irrigation. Growing vegetables in this way improved quality, increased market value, and decreased environmental pollution.
